Best I can tell, audio/music can only be added in the beginning - in preferences. Correct?
The only way to add separately recorded audio is to record the time lapse as photo, not video. Then, export the photos to a 3rd party editing app (apple, adobe, etc.). Is that correct?

Also, if audio is added in preferences, it is embedded in the file and cannot be removed later. Correct?

Yes to the first question.
To add video later, you can record either photos and videos and then add audio in a 3rd party video editor. For example, you can record the video in TimeLapse, export it to the device photo library and then use a video editor like iMovie to add audio to the video.

No, audio sits in its own track (a video file can consist of multiple tracks - video, audio, etc.). You can use an video editor to add/remove audio tracks at will. The TimeLapse editor currently ignores audio tracks so if you edit it in TimeLapse the audio will be lost in the output.
