Is it possible to zoom in or out to set the field of view before starting a session?

No, TimeLapse does not have digital zoom.

Keep in mind that because this is digital zoom, you can achieve the same effect in post processing with the right software.

Or if you move the camera closer to your subject 8)
Imagine it is a prime lens.
